La Quintessence, Gourmet Restaurant
Lyon 1st arrondissement
The bespoke décor of emotive cuisine
In Lyon’s 1st arrondissement, on Rue du Bât d’Argent, where the “en papillote” cooking method was first invented, the gourmet restaurant La Quintessence serves its emotive cuisine in a former Jesuit refectory which dates back to the 16th century.
Here, with the property’s thick stone walls, high vaulted ceiling, visible original alcoves, wooden flooring and touches of colour, the chef Anthony Baud uses quality ingredients to create cuisine which is sure to spark emotions.
At La Quintessence, conviviality is the watchword here: every dining experience is designed to be shared. The restaurant is inspired by Lyon’s culinary history and the mothers who pioneered it all, reinventing tradition with a refreshingly modern twist.
Behind a modest door at 31 Rue du Bât d’Argent lie a surprisingly historic setting and pure, uncompromising and unpretentious cuisine… Heartfelt and truly irresistible.
Anthony BAUD, gourmet ambassador of the spirit of Lyon
Born and bred in Lyon, where he was brought up on incredible dishes and raised to understand the importance of good food, Anthony BAUD sharpened his knives with the finest blades that France’s gastronomic scene has to offer, before quickly opting to go it alone.
Passionate about taste, ingredients which are prepared with artistic flair and technical skill and sauces, stocks and jus which structure his dishes, he was named 2019’s Young Chef of the Year at the 12th edition of the Trophées de la Gastronomie et des Vins.
Incredibly enthusiastic, a member of Les Toques Blanches Lyonnaises and the Collège Culinaire de France and the holder of the distinguished title of MaîtreRestaurateur, Anthony BAUD is guided by one thing only: emotion.
